Sweat and Sour Pork w/Broccoli

For the most part this is a combination of about 3 different recipes…it is really good! I actually cannot believe I use ketchup in my cooking but it works for some reason. Enjoy!

INGREDIENTS

  • 3 pounds boneless pork loin
  • 2 tablespoons Avocado oil
  • 1 tablespoons sesame oil
  • 0.5 teaspoons granulated garlic or garlic powder (I used a heck of a lot more plus .5 head of diced garlic)
  • 1/4 cup Asian rice vinegar
  • 1/4 cup honey
  • 1/4 cup Asian sweet chili sauce
  • 1/4 cup ketchup
  • 1/4 cup soy sauce
  • 1 pinch kosher salt
  • 3 or 4 finely chopped Thai peppers (optional and moves it out of the sweet and sour to a sweat, sour, and hot dish)
  • Roasted/toasted sesame seeds
  • 1 Large head broccoli

STEPS

  1. Cube the pork: Slice the 2 pounds boneless pork loin into 1-inch rounds, then cut each round into 3 strips. Finally, cut each strip into 1-inch cubes.
  2. Season & rest: Generously season the pork cubes with 1 pinch kosher salt and garlic on all sides. Let them rest at room temperature while you prepare the sauce.
  3. Mix the glaze: In a small bowl, whisk together the sesame oil, garlic and garlic powder, Asian rice vinegar, honey, Asian sweet chili sauce, ketchup, and soy sauce until silky smooth. I like to add the peppers here but you can ignore if you do not like a little heat) Give it a taste — this sauce is bold, sweet, and tangy (and maybe a touch hot).
  4. Sear the pork: Heat Avocado oil in a 12-inch cast iron skillet over medium-high heat until shimmering and just starting to sizzle. Carefully add the pork cubes in a single layer and sear, turning to brown all sides until beautifully golden, about 1–2 minutes 02:00 per side. Don’t rush this step — that golden crust is where the flavor lives!
  5. Glaze & simmer: Pour the prepared sauce over the seared pork and reduce the heat to medium or medium-low. Let everything simmer together, stirring occasionally, until the sauce thickens into a luscious, sticky glaze that coats every cube.
  6. Prepare the Vegetable: Chop the broccoli into small bitesized pieces. I like to pre-cook the broccoli to about 90% cooked and add it after the “Glaze and simmer” step for a fresher taste but it tends to not get the same amount of sauce coverage. To cook the broccoli with the dish simply add the broccoli when adding the sauce and cook with step “5 “Glaze & simmer”.
  7. Top with a healthy amount of Sesame Seeds and enjoy!
