Sweat Potato & Lentils

We had this dish at one of Ians frisbee end of year parties. It is from one of the seniors (at the time)…it was incredible! This is a little modified from that one but the gist is the same.

4 medium Sweet potatoes cubed into small pieces and roasted

I cup dry lentils cooked

5 or 6 good sized garlic cloves lightly roasted

2 tablespoons (at least) capers

As much goat cheese as you can muster

2 tablespoon olive tapenade

1/2 squeezed lemon for the lemon juice

Hunk of cilantro (to taste)

Mix all of this together keeping the cilantro to the side. Once fully mixed and seasoned to taste chill to at least room temperature (I like it a little chilled but you can also eat it warm if you would like)
