Chicken Satay Marinade

Chicken breast or thighs – cut into strips

1 jalapeno
1 red onion
3 garlic cloves
1 tbsp fish sauce
3 tbsp soy sauce
2 tbsp rice wine
1 tbsp honey
1 tbsp ginger – chopped
1/2 tsp salt
1/2 tsp pepper

Blend all ingredients except the chicken in a food processor. Pour over chicken, mixing well, and marinade for 24 hours. Soak bamboo skewers in warm water, place the chicken on skewers.
